Vegetarian Main Dish Recipes
Here is a running collection of vegetarian main dish recipes that my family has come to really enjoy. A few of them are sides, but most of them can be served as the entire meal.I won't get too preachy about vegetarianism, but most nutritionists and experts will agree with me: Americans eat WAY too much meat. I encourage you to start with one meatless day per week. Then work your way up to a few meals per week and see how you feel. Plants make up some pretty fabulous protein sources,and contrary to popular belief, as long as you're getting a variety of vegetables instead of eating the same one at every meal, you're going to be getting a pretty complete amino acid profile.
