Healthy, Quick Dinner Recipes for Kids
(and lunches too)

Quick dinner recipes for kids that can actually compete with McDonald's and those blasted, commercialized cereal and snack aisles at the grocery store.

It's been a personal challenge for me to make sure my kids get optimal nutrition. It's a huge passion of mine that I feel very strongly about. But boy, did I struggle through a couple of rough years trying to figure it all out. There are so many challenges! Prep time we don't have, picky eaters, stubborn refusal to eat anything that's green, not to mention having to compete with the excitement of Elmo, Diego and Mickey Mouse, who are selling crappy food to our children. Yes, I struggled. But now, things are a lot easier. Sure, we have our days like anyone else. But for the most part, my kids are excited to eat healthy food. Lots of fruit. Plenty of vegetables. Unprocessed, nutrient-dense fuel for their growing bodies.

This collection of recipes is for every mom out there who is where I was a couple of years ago. Half the time pulling her hair out to find easy, healthy recipes her children will actually eat. The other half the time not having the energy to deal with it, so settling for the mac-n-cheese the kids were whining for. I totally get it. But you can do this. YOU CAN DO THIS!
