My Healthy Mexican Recipe Collection

"Healthy Mexican recipe" - Isn't that an oxymoron? Mexican food is my all-time favorite. Our office often brings in lunch, and whenever I'm asked what food I prefer, I usually reply with, "anything smothered in cheese!" Really though, most popular south-of-the-border food is horrible for you. But only because us Americans have taken fabulous traditional dishes and doused them in fat and sodium. It doesn't have to be that way!

Authentic Mexican food is high in fiber, low in fat, and nutrient rich. So let's go back to the basics of where this great food came from - and you'll love it every bit as much as the grease-doused, Americanized version you're probably used to!
