Fresh Spinach Salad Recipe with Strawberries and Raspberry Orange Vinaigrette

I absolutely love this fresh spinach salad recipe. There's something about the combination of greens with the sweet berries and slight citrus flavor from the vinaigrette. It's a family favorite! Enjoy!

Serves 4

Ingredients:


1/4 cup extra virgin olive oil
1/3 cup raspberry vinegar
2 tbsp orange juice (freshly squeezed)
sea salt & pepper, to taste
1/4 cup fresh chives, chopped
4 cups raw spinach
2 cups strawberries, quartered
1/2 cup sliced almonds, toasted
1/2 cup feta cheese
4 four ounce tilapia filets, grilled (this is totally optional, and you can sub it out for grilled chicken breast if you like, too!)

Directions:


Make vinaigrette by combining olive oil, raspberry vinegar, orange juice, sea salt, pepper and chives. Blend with a whisk. Toss spinach, strawberries, almonds and feta cheese with just enough vinaigrette to coat lightly. Top with optional protein.
