Honey Glazed Chicken Dijon

This Honey Glazed Chicken Dijon recipe is a great family friendly dish. It can can be a delicious chicken recipe with or without the salad greens listed in the ingredients. If you're looking to combine a two healthy recipes try serving it with the Roasted Veggies recipe also listed on this site.

It may sound crazy, but this Dijon Chicken recipe is so yummy you're kids will love it, and you'll find them eating the veggies you serve with it. My 4 year old asks us to make this recipe often. It also packs well for delicious lunches the next day.

Ingredients

4-4oz Chicken Breasts
1/4 cup Finely Chopped Onion
3 Cloves Garlic, Minced
5 tbsp Extra Virgin Olive Oil
2 tbsp White Wine Vinegar
1 tbsp Dijon Mustard
1 tsp Honey
1/4 tsp Salt
1 tsp Black Pepper
1/2 tsp Poultry Seasoning

Optional
6 cups salad greens of your choice4 small tomatoes quartered or 16 cherry tomatoes

Directions

For the marinade, place 3 tbsp of the olive oil, onion, garlic, 1 tbsp white wine vinegar, pepper, salt, and poultry seasoning in a mixing bowl. Whisk them all together and add the chicken breasts to the mixed ingredients. Make sure to coat the chicken well on all sides.

Grill the chicken 5 to 7 minutes on each side until cooked thoroughly throughout.

While the chicken is grilling combine 2 tbsp olive oil, 1 tsp white wine vinegar, honey, and the dijon mustard into a small mixing bowl. Mix this together thoroughly to create a delicous glaze you can drizzle onto your cooked chicken.

To make this into a salad simple slice the chicken and lay it on a bed of salad greens with tomatoes and drizzle the Dijon sauce on top of your chicken salad.

This Chicken Dijon recipe requires a marinade to be made at least 2 hours before the cooking the chicken, preferably the night before. The longer you allow this to marinade the more flavor you'll have. Just keep the marinade in the fridge until you're ready to cook the chicken.
